Vietnamese salad like a Banh mi

  Ingredients 6 slices of country bread 200g smoked tofu 4 salad leaves 3 carrots 3 tomatoes 2 shallots 6 case of Soy sauce 20cl sunflower oil 1 of Ancho Rojo pepper from Mexico 50g sugar 10cl vinegar 15cl water 1 Egg yolk 1 mustard Preparation tips 1. Make the pickles: Peel and cut the shallots into slices.  In a small saucepan, combine the sugar, vinegar and water.  Bring to the boil, mix to dissolve the sugar then add to the shallots.  Let cool. 2. In a bowl, put the diced tofu.  Add half of the soy sauce.  Leave to marinate. 3. Rinse, drain and cut the salad.  Peel and grate the carrots.  Cut the tomatoes into thin wedges.  Gradually place these ingredients in a salad bowl.  Rinse and chop the coriander, which everyone will add according to their taste. 4.   The story of an indomitable flower Vanilla (Vanilla planifolia) is a climbing vine that can reach around fifteen meters in height.  Growing in a tropical climate, after flowering it gives green fruits in the shape of long beans, which we call pods.  The Vanilla genus belongs to the Orchid family and has over a hundred species.  Only a few are marketed for taste purposes: we note Vanilla tahitensis and Vanilla pompona.  Vanilla planifolia from Madagascar represents 80% of the world market. The word Vanilla comes from Vanilla in Spanish which means “Bean”.  Indeed Herman Cortés led his first expeditions within the Aztec empire in 1519 and brought it back to serve the kingdom of Spain.  It gradually introduced itself into the European royal courts. In 1819, when we already knew “Vanilla Planifolia” in the gardens of the Natural History Museum of Paris, we decided to export it to Bourbon Island, in other words Reunion, because it should be popular there....

Einkorn flake pancakes with turmeric and endive and apple salad

  Ingredients 180g small spelled 1 case of malted yeast 2 eggs 1 clove garlic 3 endive 1 piece of ginger 1 Turmeric 1 Red Apple Preparation tips 1. Pour the einkorn flakes into a salad bowl and cover them with hot water, just to the level.  Leave to rest while you prepare the endives. 2. Cut the end of the endives and remove the central part.  Cut them in half lengthwise and slice them finely.  Cut the apple and dice;  Reserve it all in a salad bowl. 3. Add the malted yeast, turmeric and previously peeled and grated ginger to the flakes. 4. In another bowl, whisk the eggs with the peeled and pressed garlic.  Pour the beaten eggs over the flakes.  Salt, pepper and mix. 5. Heat a medium oiled pan then pour the mixture over the entire surface (otherwise make individual patties).  Leave to cook for 6 to 8 minutes.  over high heat before carefully turning over (see front).  Finish cooking for about 5 minutes. 6.
